Great Summer Vegtable Recipe

I found this recipe that uses common summer vegetables, tomatoes, yellow squash and zucchini, is simple to make and is delicious. This dish is great hot or cold, so it's a breeze to have as leftovers too!

The original recipe calls for the vegetables to be grilled on skewers, but I've found that roasting them in the oven works just as well.

Grilled Vegetables with Linguine
Serves 12 (1 1/2 cup each) Source: Hy-Vee Test Kitchens

What you need:
  • 8 bamboo skewers
  • 2 tbsp extra-virgin olive oil
  • 1/4 c. white wine vinegar
  • 2 tbsp granulated sugar
  • 2 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp freshly ground black pepper
  • sea salt, to taste
  • 1/2 pound uncooked linguine
  • 1 red bell pepper, seeded, cut into large chunks
  • 3 Roma tomatoes, seeded, cut into large chunks
  • 1 yellow squash, halved lengthwise, cut into 1/2-inch slices
  • 1 zucchini, halved lengthwise, cut into 1/2-inch slices
  • shredded Parmesan cheese
What you do:
  1. Soak skewers in water for 30 minutes.
  2. To make vinaigrette, whisk together olive oil, vinegar, sugar, Italian seasoning, garlic powder and black pepper. Add salt to taste.
  3. Prepare linguine according to package directions. Rinse with cool water; drain well. Place in a large bowl and toss with 1/4 cup vinaigrette.
  4. Meanwhile, thread vegetables onto skewers. Brush with vinaigrette.
  5. Grill vegetable skewers, occasionally turning and brushing with vinaigrette, over medium-hot coals for about 5 minutes or until vegetables reach desired tenderness.
  6. Carefully remove vegetables from skewers. Toss vegetables with linguine and remaining vinaigrette.
  7. Serve at room temperature or chilled.

Clorox Laundry Scavenger Hunt

The Clorox Laundry Scavenger Hunt is a new Widget on CafeMom, a great social network website for moms. How it works is you visit other members profiles and collect clothing and bonus items, and "wash" them to earn points. There are several bonus items such as a missing sock, and teddy bear.

I joined CafeMom a while back, but have started to get involved on the site more lately. It's a really nicely done social networking site, with clean graphics and fun widgets. And now I'm addicted to this silly game.

J.K. Rowling announces new book


I just got an alert from Barnes & Noble that J.K. Rowling (Harry Potter author, for those of you living under a rock) will be releasing a new book in December. From bn.com, The Tales of Beetle the Bard, will contain all five wizarding fairy tales left to Hermione Granger by Albus Dumbledore in the final book in the Harry Potter Series.

I was curious to see if J.K. Rowling would write any more books in the Harry Potter series. I think I'll have to buy it since it's only $8.44.
